The
art of sugar and glaze coating is performed
in a room that has a capability of thirty-two
coating pans. The front opening of the
coating pans are under a strong negative
pressure, which prevents any airborne
contamination from occurring when the
pans are initially loaded. Once the coating
operation has commenced, the same coating
is applied to all of the coating pans
simultaneously. Sliding fiberglass panels
segregate pans of the same items.
